Black Bean Mexican Soup Black Bean Mexican SoupINGREDIENTS:

  • 1 tbs olive oil
  • 2 cloves of garlic – minced
  • 1 medium yellow onion -diced
  • 2 medium carrots – diced
  • 400g chopped canned tomatoes
  • 1 cup red lentil – uncooked
  • 200g canned black beans
  • 4 cups homemade veggie stock
  • 2 dashes of salt
  • 1 dash of black pepper
  • 1 tsp ground cumin
  • 1 tsp chili flakes

 

INSTRUCTIONS:

1. Heat olive oil, add garlic and saute for 1 minute.

2. Add diced onions & carrots, saute until tender, about 5 minutes.

3. Add the remaining ingredients, stir and cover.

4. Bring to boil then turn down to a simmer, cook for 25 minutes.
