A cup of warm chowder can go a long way. Plus it’s my family’s favourite.

INGREDIENTS:

  • 4 slices bacon (optional)
  • 1 tbs olive oil
  • 1 medium leek – chopped
  • ½ cup celery – chopped
  • Dash salt
  • Dash pepper
  • 2 yellow potatoes -diced
  • 2 cups steamed corn
  • 4 cups homemade chicken stock
  • 4 tilapia fish fillets – diced
  • 2 tbs fresh thyme – chopped
  • ½ cup low fat cooking cream
  • 2 tbs lemon juice
  • 2 tbs fresh parsley – chopped

 

INSTRUCTIONS:

1.) Chop bacon and cook until crispy. Set aside.

2.) Add oil to the pan and warm it up, then add leek, celery, salt & pepper. Cook until it softens.

3.) Add potatoes, corn and broth to the pan & bring to boil, then simmer for 8 minutes.

4.) Add diced tilapia and fresh thyme, then cook for another 4 minutes.

5.) Stir in cooking cream and lemon juice, then transfer to bowls. Top with bacon and fresh parsley.
